Nightmare before Christmas!! Taint in a Food Factory - a chemical detective story
Taint is not normally talked about in the food industry. This is a real case that happened several years ago and brings together an understanding of taint chemistry, analysis to identify and quantify taint chemicals, targeted use of sensory analysis, process engineering and a lot of detective work to resolve the issue.
The taint was found in icing sugar and the team had to very quickly learn about taints and how to detect them. This presentation will provide an overview of the manufacturing plant used to make icing sugar, provide an insight into the taint chemistry involved concentrating on halo-anisoles notably trichloroanisole (TCA). The process of finding out how and where the taint was arising will be outlined and the remedial actions carried out to prevent this happening again and the on-line monitoring that was carried out will be presented.
