This conference will cover the developments in the analysis and characterisation of the major components of lipids, oils and fats, such as fatty acids and triglycerides, and minor components such as sterols, and the advances in the tools used to generate and interpret whole lipid profiles e.g. lipidomics. The recent developments in the detection of contaminants of oils & fats, such as 3-MCPD esters and Glycidyl esters, will also be presented.
